• A Baby & A Pandemic…In That Order

Well, it has been quite the First Quarter for the Cantina Crew and likely, everyone around the world! If you would have told me a year ago that I would be having a beautiful baby boy followed by a city shutdown, I would have laughed and likely said, “There are way to many Tacos to Sling and Cervezas to be had!” Life happens and Noah and myself would have it no other way. We will start with Baby Otis. Some may ask…Why Otis? Well, I initially thought Noah brought it to my attention because it seemed original and we have never known an Otis. Then after remembering his favorite song,…

  • A Year in Review

Shame on me…its been close to a year since I wrote a Blog and updated everyone about the Cantina Team. Needless to say, we have been a bit busy. This past year, we managed to open a NEW Business, learned of a bun in the oven and still find ourselves somewhat sane. Where does one begin? 2019 started off like most of the other years. A few ideas on resolutions, some changes for the Cantina and work to get the calendar going for a busy food truck season ahead. One thing was added this particular year….the opening of 240 Adams LLC. Chef Noah had worked for a year to rebuild…

  • The Story of Us!

Have you ever wondered how both myself and Noah, got into the Food Truck business? Entrepreneurship was not something that we had originally planned for ourselves, but things just took off shortly after we met! Our story starts in Columbus, OH at a little Irish Pub, known as Dempsey’s Food & Spirits (Check them out on Proclamation & St. Patrick’s Day. You won’t find green beer, but you will find some authentic cuisine and music). Noah was the Executive Chef at Dempsey’s; his first Executive Chef position! About a month after the restaurant opened, I came into Dempsey’s for an interview as a Bartender. I had heard about the position…

  • 2018: A Year of Growth

It is hard to sum up the past year, as it was overwhelming, full of chaos, but full of fun! We managed to fill the calendar with a lot of work, travel, family & friends….we even bought our first home! We started the year with construction on our, recently purchased, commercial property in Butchertown. We kept the plans underwrap, as we were uncertain on how this space would unfold. We knew we wanted to create a space for people in the industry. A community of Food Truck Owners, Caterers and other entrepreneurs to assist each other and work together to build their individual brands. With much of the work being…

  • Friday the 13th

It was a hell of a day. The day began like any other day; Chef Noah & me racing to stock the truck and working quickly to get downtown, for what was sure to be a busy lunch. The morning begins to come together. Noah finally arrives to our reserved meter, eager to get lunch ready for the crowd. And it is a crowd: 150 people over the course of two hours! This is a wild lunch for any food truck, but we are happy and feeling great. We don’t run out of any food, every guest leaves satisfied, and we receive two 5 STAR Reviews. We take a breath,…

  • Hope for a Wonderful 2017!

Just like all the other ones, this blog is a bit late! My theory: blogs are never on time and I am pretty terrible at writing them. 2016 was one hell of a year! It flew by, creating so many memories for Chef Noah and me. We uprooted our lives and moved to my hometown of Louisville, Kentucky. We left our job security, some wonderful family and friends and decided to take a chance on our business, vision and future. It was a scary transition, but one that we knew we could make together. After settling into our small one bedroom apartment, finding a wonderful space for the food truck…

  • Give Thanks 2016

November 22, 2016 Tis the Season to be Thankful! As I reflect on this year and think about what I am most thankful for, the person and thing that always comes to mind first, is Noah Yates. Not only do I have the privilege of being his wife, but I also have the opportunity to be his business partner. Now, running a business with your husband is everything but peaches and cream, but it is a journey that not a lot of couples experience and get the chance to go on together. Noah is the root of the Smok’N Cantina and without him and his culinary expertise, this whole food…

  • Cantina Update

It sure has been one HOT Summer, in the Bluegrass State. Between the rain and the heat, it’s a wonder how we still manage to keep the weight on! None the less, it has been a fantastic summer. With many compliments on food, some failures in time management, and even a few getaways, I put this summer on the top of my lists as one of the best. Noah and I have grown the business, developed new ideas for other endeavors and even started to think about next steps for the Cantina; a successful summer to say the least. However, these cool mornings are making us anxious for fall. With…
